About this book

When I first envisioned this project after signing the contract, I had a very specific idea of how much time and thought would have to go into gathering information from real people—living and dead—to use as the basis for the stories we were attempting to construct. The goal of the project was to collect 65 traditional dishes from different parts of Pampanga, with three recipes chosen from each of the 19 municipalities and three cities in the province. My standards and beliefs were unwavering: we had to take pictures of each dish as it was served and get every detail from the person who was serving it. The 2,002.20 square kilometers of Pampanga land area will have to be “excavated” for this.
